There are dishes that feed you and there are dishes that restore you. Abula is the second kind.
The name refers to the combination rather than a single dish, and that combination is one of the most celebrated in Yoruba cuisine. Amala, made from yam flour, smooth and deeply dark, forms the base. Gbegiri, a silky smooth bean soup with a warmth and richness that is entirely its own, is ladled alongside it. Ewedu, a light, slightly mucilaginous green leaf soup with a clean, fresh flavour, is added to balance the richness of the Gbegiri. Finally, the Buka-style stew, a deeply spiced tomato and pepper stew with beef cooked low and slow until it absorbs every layer of flavour in the pot, is poured over the top.
Each element is distinct. Together they become something that is greater than the sum of its parts, a plate that has been perfecting itself in Yoruba kitchens and Buka restaurants across Nigeria for generations.
